Sencha - China Green

When tea was first introduced to the Western world, this is what they would have seen. Not to be confused with Japanese Sencha- (which is steamed before firing) - the Chinese version is pan fired soon after plucking to halt any oxidisation. This style of manufacture is used throughout China and this particular tea reigns from the Anhui Province in the East.
