Chinese Lapsang Souchong Falcon

This remarkable Lapsang Souchong tea comes from the lower hills of the Wuyi Mountain range of Fujian Province in Eastern China. The tea grows in soil which naturally gives the leaf a light tarry character, this is enhanced further by firing the tea over wood chippings.

Poorer quality teas will have oil added to give a false smoky character, which is why the better quality Lapsangs (like this one) will have a finer, lighter smokiness to them.

1 teaspoon per person (3g).  Brew with freshly drawn boiled water for 3-4 minutes. Experiment with it on its own or with any variation using milk or lemon and honey.
